Hello, friends! How’s your week going? Today I have a new smoothie for you that I believe will knock your socks off! I also have two new books to share. Let’s get going!
When I think of fairy tales, I think of pumpkins and that’s why this recipe was slightly inspired by Happily, a book by Chauncey Rogers that I’m starting this week. You can learn about this book below.
Pumpkin Pie Smoothie:
- 1 cup almond or coconut milk (any milk works)
- 1 cup of cooked pumpkin or sweet potato
- 2 frozen bananas
- Dash of vanilla
- 1 tsp of pumpkin pie spice
- 1 TB raw honey
Directions:
Add all the ingredients to your blender.
Blend until smooth.
Garnish with chia seeds and extra pie spice if desired.
Tips:
I ended up using a simple cooked sweet potato in place of the pumpkin which tastes pretty much the same. It’s quite amazing really and equally as healthy. If you’ve had sweet potato pie, you know how similar these two taste. Just boil your sweet potato with the skin on until soft and a fork will go through the flesh easily.
The outer skin just falls right off and it’s ready to blend after cooling a bit.
You can make a simple pumpkin pie spice to keep in your cupboard for future use. It’s so simple!
- 4 tsp. cinnamon
- 2 tsp ground ginger
- 1 tsp ground cloves
- 1/2 tsp nutmeg
As you can see in my blender pic above, I made this very quickly with just water and a little almond butter. This makes an easy almond milk and no need to make it ahead. After making two smoothies this morning, I was too lazy to make more milk and this method works just as well. Make it simple!
If you like pumpkin pie or sweet potato pie, you’ll love this. I promise!

My Thoughts:
I don’t even know what to say about this book other than it has me completely enthralled. It’s insane! I can’t even remember why I bought this one on Audible, but I’m glad I did. Agatha’s and Meghan’s story will certainly entertain you with all their drama. I’ve been shocked more than once with some of the twists and love the way it’s written. I’m on the edge just wondering how this one’s going to end. This is my new author book for March on the Ultimate Reading Challenge and I’ll have a review this weekend for you guys.
